2 cups gluten-free all-purpose flour
-
1 and1/2 tsp gluten-free baking powder
-
1/2 tsp baking soda
-
1/4 tsp salt
-
1/2 cup softened unsalted butter
-
1 Cup (85g) Switten 1:1 zero calorie sugar
-
3 large eggs
-
1 tsp vanilla extract
-
1 cup buttermilk
Preparation
-
Set the oven temperature to 350°F (180°C). Grease and place parchment paper inside a square baking pan.
-
Mix the baking soda, baking powder, gluten-free flour, and salt in a bowl. Put aside.
-
Beat the softened butter and natural sweetener in a large mixing mixer until frothy and light. One egg at a time, adding and beating thoroughly after each addition. Add the vanilla extract and stir.
-
Alternately add the buttermilk and the dry ingredients to the wet components gradually. Add the dry ingredients last, whisking just until incorporated.
-
After filling the baking pan, level the top with the batter. A toothpick inserted in the center should come out clean after baking for 25 to 30 minutes in a preheated oven.
-
Before taking the cake out of the pan, let it cool fully.
-
Cut the cake into squares or rectangles after it has cooled.
-
To make the chocolate coating, combine the melted butter, boiling water, cocoa powder, and powdered natural sweetener in a bowl.
-
Make sure every cake square is well coated by dipping it into the chocolate mixture.
-
Cover all sides of the covered cake with crushed coconut.
-
After coating, place the lamingtons on a wire rack to cool. Before serving, let the chocolate coating solidify.
